What it does
Cocoa extract is derived from the seed of Theobroma cacao and concentrates the polyphenols of the bean — primarily flavanols (epicatechin, catechin) and the alkaloid theobromine. In a formula these contribute antioxidant activity. It is a distinct ingredient from cocoa butter (the solid fat from the same bean, an emollient/occlusive) — the extract is included for its phenolic chemistry, not its lipid content.
